This beautifully grained slice of English oak has been ebonised to darken the wood, making it perfect for preparing or presenting colourful foods – beetroot, curry – that can’t help leaving their mark.

Like all of our food boards, the ebonised oak version is handcrafted in the workshop at HMP Warren Hill, just down the road from the Hyrst studio in Suffolk. Income paid by Hyrst to Warren Hill is used to fund training qualifications that will reskill residents in preparation for their release.


This food board is made from British-grown oak, which is ebonised using a natural solution that reacts with the tannins in the wood, and then finished with a food-safe oil derived from natural ingredients.

Every Hyrst board is unique. The grain and colour of yours may differ slightly from the board shown in the photograph. Some of our ebonised oak boards contain a paler streak – this is the sapwood, which has fewer tannins and therefore resists the ebonising process. Subersive, eh? In common, all of our boards are solid, single-piece, beautiful and generally life-affirming (in our slightly biased opinion).


All of our food boards are finished with a food-safe wax oil, handmade in the UK from natural oils and pure waxes.

To clean your board, wipe with a damp cloth. Don’t soak it in water, and avoid putting it in the dishwasher. The natural fibres of the timber will fluff slightly after contact with water; over time, the board can be buffed back to a smooth state with a high-grit sandpaper.

Similarly, if the board dries out a little over time, additional coats of food board oil or wax will keep it sweet for years to come.


The small ebonised oak chopping board is approx. 460mm x 120mm. Because we try not to waste any timber – even the wood that develops a slight wave when dried for use – some boards might take an extra pass or two through the plane to achieve a nice flat surface. And so, the thickness of each board can vary, from approx. 18mm to 25mm.

Timings & Delivery

We aim to dispatch Hyrst boards within 24 hours of ordering, dependent a little on how many we can carry on the Hyrst pushbike down to the post office. Small and medium size chopping boards are sent via Royal Mail’s second class signed-for service; the cost of £4.50 will be added at checkout. Large chopping boards are sent via UPS signed-for service; the cost of £5 will be added at checkout.
